Pink Topsy Turvy Cake

My latest cake was a rather special one – one of my good friends asked me to make an engagement cake for her and her lovely fiance as my gift to them. The theme was based around the colour pink and the cake had to serve around 70 people. I was so excited I got to designing it straight away and after spending a ridiculous amount of time looking at Google images for some inspiration (there are just so many amazing cakes out there!), I decided I would make my second ever Topsy Turvy Cake. This is how it turned out:


I was a little bit nervous about attempting this cake, but it came together with surprisingly few problems. I think my main worry was the big bow on top and I didn’t know whether it would stand up properly until the very last moment – but it did, yay! (and phew! I didn’t really have a back-up option for the cake topper if the bow didn’t work…).

The letters to spell out the names were actually a bit of a pain which was surprising, but it took me about three attempts to cut out some of the letters, especially the ‘Rs’ and the ‘n’! All the little squiggly bits kept getting stuck in the cutters and I didn’t end up coming up with a good solution, except for maybe waiting letting the fondant dry a little before cutting the letters out, which seemed to help a little.

So here’s a close-up of my two main challenges during the making of this cake, the bow and the letters, which both worked out well in the end 🙂

The main difference between this cake and my first ever Topsy Turvy Cake was the way I stacked the layers. Last time I had cut into the bottom two layers, so that the middle and top layers were actually sitting flat. This time, I followed Lindy Smith’s method for what she calls ‘Wonky Cakes’ (check out her amazing designs here) and I just stacked the layers and stuck them on with a little bit of sugar glue so they wouldn’t move. I have to say, it worked a treat and not having to cut into the bottom layers saved me a lot of time and effort.

    Hope you are enjoying Brisbane 🙂 I just wanted to say that the cake (picture above) you made for us was amazing! I especially loved the fact that you made each layer a different cake flavour, such as white chocolate, chocolate, etc.The ganache filling made the cake part extra moist and your choice of fondant was perfection.

    We both feel very lucky to have had this yummy gift at our engagement party.
